Welcome, and Frittata!
Hey there everyone, and welcome to The Paleo Table! I’m Amber, and I’ll be your dinner host while you’re here. I decided to start The Paleo Table to help other people like me: everyday home cooks who want to eat a healthy meal without sacrificing taste, who like hanging out in the kitchen, cooking for the joy of feeding themselves and those they love. I don’t have any professional training as a chef, recipe writer, or nutrition scientist. I just like food; I like shopping for food, I like cooking it, I like taking pictures of it, and of course I like eating it.
Why eat Paleo?
For those of you just getting acquainted, the Paleo way of eating is this: eat whole foods – lean meats, seafood, vegetables, fruits, nuts and seeds. Avoid grains, dairy, legumes and sugar. That’s pretty much it! Why do I eat this way? The Paleo way of eating makes me feel my best. My skin looks great, I don’t have digestive issues, I am more alert, and I have high energy.
People use the Paleo diet for all sorts of different reasons: to cure the symptoms of an autoimmune disease, to keep their blood sugar and triglycerides in check, to get the most out of their athletic performance, and to lose weight. All that being said, this is not a “dieting” blog. Although you will probably lose weight if you eat a Paleo diet, my purpose with this blog is to give you delicious and easy Paleo-friendly recipes that you can pull off in your own kitchen. I’ll also be offering tips on grocery shopping, meal planning, navigating farmers markets and CSAs, finding high quality food, shopping on a budget, and more. You’ll also see interviews with real people who live the Paleo lifestyle, and learn how they incorporate this way of healthful eating into their everyday lives.
And now, a recipe
To kick things off, here’s a super simple recipe that really pays off with a ton of nutrients. It’s got plenty of protein and good fats, and a healthy dose of vitamins from the leafy, green spinach. It’s perfect for breakfast, lunch or dinner. It’s quick. It’s great hot or cold. It tastes yummy. Need I say more?
Spinach & Bacon Frittata
A frittata is basically an omelet that you start on the stovetop and finish in the oven. The texture is a lot like a quiche, only without the crust! You can fill it with all kinds of ingredients; so it’s a perfect “clean out the fridge” recipe. I made mine with spinach and bacon because that’s what I had on hand, but it would be great with any combo of meat and veggies. Sausage and mushrooms, tomato with ham, bell peppers and pancetta; the combination possibilities are really endless.
- 6 eggs (preferably pastured or Omega-3 enriched)
- 1 teaspoon cooking fat: grass-fed butter, olive oil, coconut oil, etc.
- a couple handfuls of baby spinach
- 5-6 strips of bacon (preferably nitrate/nitrite-free), chopped into small pieces
- 1/2 teaspoon black pepper
- pinch of salt
- Preheat your oven to the broil setting.
- In a bowl, beat the eggs with a fork, and blend in the salt & pepper. Heat a 10-12 inch oven safe saute pan over medium high heat. A nonstick pan will work, a well-seasoned cast iron pan is even better.
- Add your cooking fat to the pan. Add spinach and bacon to the pan and cook for 3 to 4 minutes until the bacon starts to get crispy and the spinach is wilted. Pour the eggs into the pan, distributing evenly over the veggie/meat mixture. Cook it for 4-5 minutes (just let it sit on the burner) until the eggs have started to set on top but are still runny/jiggly in the middle.
- Put the pan in the oven under the broiler for 3-4 minutes, until the top is fluffy and lightly browned (keep an eye on it!). Cut into 4-6 servings and serve right out of the pan, or let it cool and serve later at room temperature. Enjoy!
