Bacon Toffee Pecan Cookies Recipe
Featuring Country Crock’s #MakeitYours Cookie Recipe
I recently received a great VoxBox full of Back to School goodies. We received a coupon for a free tub of Country Crock © and the new recipe for their Make it Yours Cookies. I have been a fan of Country Crock since I was a kid.
My Mom used it and we use it in our household to this day. We love the flavor of Country Crock© and the value, not to mention it is super spreadable, even right out of the fridge! (plus those big Country Crock© containers are great for leftovers) I may be a great cook, but I am a notoriously bad baker.
I have reached a point that I bake for the holidays and that is about it (and those tried and true family recipes only go right for me about half the time). So, I was both excited and nervous to try out the Make it Yours Recipe. This family loves bacon, so if we were going to make this recipe ours it needed t include bacon.
After consulting with our pantry and my assistant baker (my sweet bacon loving 6 year old) we decided to add bacon, toffee, pecans, and cornflakes to our cookies. And, so, our AMAZING Bacon Toffee Pecan Cookies were invented!
Ingredients:
- 1 cup Country Crock© Spreadable Sticks or Tub
- 3/4 cup granulated sugar
- 3/4 cup firmly packed light brown sugar
- 1 large egg
- 1 large egg yolk
- 2 tsp. vanilla extract
- 3 cups all-purpose flour
- 1 tsp. baking powder
- 3/4 tsp. salt
- 1/4 tsp. baking soda
- 1/2 cup chopped pecans
- 1/2 cup chopped toffee pieces
- 1/2 cup crushed corn flakes
- 1/2 cup finely chopped crisp bacon
Method
- Preheat oven to 375 degrees F.
- Mix Country Crock© Spread, granulated sugar, light brown sugar, egg, egg yolk and vanilla in large bowl until well mixed.
- Stir in flour, baking powder, salt and baking soda until blended. (Dough will be soft and creamy.)
- One at a time add pecans, toffee, bacon and corn flakes until well mixed.
- Drop dough by rounded tablespoonfuls on to an ungreased baking sheets 3-inches apart.
- Bake 10 to 12 minutes until edges are lightly golden.
- Cool 1 minute on wire rack; remove from sheets and cool completely.

These cookies looked good, smelled good, and didn’t last long in this household! With Country Crock’s Make It Yours recipe I am no longer afraid to bake!
