Easy Baked Macaroni and Cheese Recipe

I am so sorry for the late post! I have some new ideas for the blog and have been coming up with ways to post more often!

This past weekend, I made a delicious Macaroni and Cheese for my family’s fall cookout. It was my first time making homemade macaroni and cheese, and it was definitely a hit!

I am not a fan of box macaroni and cheese! I am not too fond of cheese as it is, so if I am using cheese, it has to be a good one! This macaroni and cheese isn’t difficult to make, and I recommend it over the boxed stuff any day! Although this recipe is not “healthy,” it is still full of real ingredients.

I was inspired from the macaroni and cheese recipe from Kitchen Treaty, although I did alter the recipe quite a bit to what I wanted!

Baked Macaroni and Cheese

  • 8 ox. box of pasta (I used whole wheat shells)
  • 4-5 tablespoons of butter
  • 1/4 cup flour (I used whole wheat flour)
  • salt and pepper
  • 2 tsp mustard
  • 2 cups milk
  • paprika (I used a little less than 1/4 of a teaspoon)
  • 4 cups or 2 bags of shredded cheddar cheese (I used sharp and mild)

Directions

1. Cook the pasta according to directions.

2. Melt butter in pan and add flour, seasonings, and mustard and just stir over low to medium heat for a few minutes.

3. Pour in the milk. Stir or whisk for about 8-10 minutes, until it’s nice and creamy!

4. Remove from the burner and add 2 cups of cheese.

5. Pour sauce over pasta and then pour half of mac and cheese into a baking or casserole dish. Add 1 cup of cheese on top. Pour in other half of mac and cheese and add remaining cheese on top.

6. Feel free to top with paprika or bread crumbs if you desire!

7. Bake for 20-25 minutes at 375 degrees F.

I doubled this recipe for the cookout and it was still all gone! (Thanks to my boyfriend eating about 4 servings)

Although it seems soo impossible to make this recipe vegan, I promise it’s possible! Use a veggie cheese, such as Veggie Shreds, replace the milk for almond or soy, and use a vegan butter replacement!

If you ever make vegan versions of any of my recipes, I would love to hear how they turn out!

My boyfriend and I almost never eat out, so to treat ourselves on Sunday, we decided to go to one of our favorite restaurants…Sweet Tomatoes!

Anyone else love this place as much as we do? Although they have started adding more meat to their recipes, (sad for us!) this place is still super yummy! One of our favorite parts is the salad bar. It is endless! This place has lots of healthy options, but we still indulge in a muffin or two and dessert while we’re here! 😉
