Traditional Bulgarian Tarator Recipe (Cold Summer Delight Soup)

Cold bulgarian Tarator Soup recipe

I discovered this recipe last summer, during our holiday trip to Bulgaria with few of my close friends. Tarator is a cold soup of Bulgarian origin, made from cucumber, dill, garlic and yogurt. It is a very quick recipe to prepare, and really very fresh, especially interesting so in case of heat. I am always looking for cold recipes to consume in the summer, to have the least to use my plate or my oven, and therefore to avoid heating my kitchen !

Cold soups are one of my favorites for the summer: no cooking, little dishes to wash, makes for a wonderful refreshing, healthy and light meal! I am a real  amateur of making salmorejo, because it is impossible for me to consume gaspacho too often, the spicy pepper is not really getting along with my tummy ;-).

In summer, we all naturally turn to vegetables rich in water such as tomato but also cucumber. I already offer you many recipes with cucumber on the blog, so it was necessary to innovate ! I am a big fan of cucumber salad with mint pesto, also ultra fresh. This cucumber soup is a good alternative, to vary the pleasures.

How to make a Bulgarian Tarator cold cucumber soup?

This recipe from tarator is really very simple : just cut the cucumbers into small cubes (I cut them coarsely here, but you can cut them even smaller), mix them with a clove of crushed garlic, a nice amount of dill, salt, a drizzle of olive oil and yogurt. Under the action of salt, the cucumber will release some water and therefore dilute a little the yogurt mixture.. it will be just enough to add fresh water for making the complete tarator!

This recipe should not be confused with tatziki. The tatziki is certainly extremely similar, but it is not at all the same dish. It is a “mezze”as they call it in Bulgaria, or basically a light cold soup or sauce, based on grated or finely chopped cucumber, degorged in salt and then mixed with garlic / onion and mint / dill or fennel. Its texture is much denser than that of the tarator. It’s perfect to start of your meal and wake up you appetite.

 

Which yogurt to choose for the tarator recipe?

 

Your soup will be better with a Bulgarian yogurt, of course. There are more and more “yogurt of the world ” in our supermarkets, after Greek yogurt and skyr, you should easily find Bulgarian yogurt. If nevertheless you can not find any, you can mix brewed yogurt with Greek yogurt. Bulgarian yogurt is similar to brewed yogurt, it must be relatively liquid and creamy.

Ingredients

  • 2 cucumbers
  • 200 g Bulgarian natural organic yoghurt (or homemade yogurt)
  • 2 cloves of garlic
  • 20 g of dill let half a handful
  • 3 tbsp. olive oil
  • fresh filtered water

Instructions

  1. Wash the cucumbers and cut into small cubes.
  2. Put the cucumbers in a salad bowl with salt and crushed garlic cloves.
  3. Add yogurt then dill and mix well.
  4. Let stand for 3 to 4 H minimum, so that the cucumber returns its water. Then add very cool water until a liquid consistency is obtained.
  5. If you serve immediately, add water directly, until a liquid consistency, like a soup.

Notes

I can’t tell you the exact amount of water to be used though. The amount of water needed will mostly depend on the type of yogurt you use, whether you make the cucumber grow upstream and the texture you enjoy. I like when the tarator is still a little creamy, so I put only a small glass of water at home.

This recipe can also be topped with nuts, according to cross-recipes on the Internet.. But I largely prefer the version that keeps only the crunchy cucumber…
