I’ve had such a busy weekend. I’m glad to finally be giving y’all this great crockpot recipe for fall! Crockpots are great for when you don’t feel like being in the kitchen all night. Just throw this in the crockpot at lunchtime and it’ll be ready for when you get home!
My first crockpot recipe of the season was this delicious vegetable soup. I really just took all of the veggies I had in my house and threw them into the crockpot and it was delicious! I hope you all enjoy this recipe.
Crockpot Vegetable Soup
- 2 carrots
- one white potato
- one sweet potato
- one yellow squash
- one Roma tomato
- one zucchini
- two stalks of celery
- a few slices of onion
- half bag frozen corn
- 2 cups vegetable broth
- 2 cups tomato soup broth
1. Microwave both potatoes for 1-2 minutes. (This makes them easier to cut and you don’t have to worry about them being undercooked) chop all vegetables into bite sized pieces. I left my onion in big chunks just for flavor.
2. Put all veggies and cilantro (to taste) in crockpot. Pour broth and half a cup of water on top. Add seasonings (to taste).
3. Stir and cook on high 4-6 hours. You can cook on low for probably up to 7-8 hours.
This recipe makes about 4-5 servings.
Feel free to use only vegetable broth! This recipe was so easy and delicious!
