This Easy Homemade Nutella Recipe is a continuation of one desire I had for a while.

I’ve been looking forward to making my own Nutella for a loooong time. I remember my friend suggesting that I make it for Make it Yourself Monday, so Katy, your wish is my command! So, Welcome to Day 2 of my Nut Butter Week! I’m very excited about this recipe

I would actually call this chocolate hazelnut butter, because it’s not quite as sweet and it doesn’t have milk in it (no idea what that adds to Nutella!) but it is delicious, addictive, and you will not be sorry you made it! It still has added sugar from chocolate chips, but sugar isn’t the main ingredient, like store bought Nutella.

You probably have not escaped that holiday season and Christmas is coming soon : television, radios, social networks and blogs have started to tempt us with great preparations of cakes or pancakes on our favorite cooking shows. But.. But.. You can’t really skip the essential element to pancakes.. The filling! Whether it is a simple jam, just honey, or an elaborate spread, it is a great element of gluttony which you cant just ignore. And if you have kids / grown-ups, one of their favorite pancake toppings is probably the famous chocolate-hazelnut spread that starts with an N? 🙂

Faced with the presence of palm oil, half of the jar weight consisted of sugar and other “hidden” ingredients in this commercial product, I quickly decided to try to find a healthier homemade version. As you probably already know I live homemade recipes. The recipe for homemade Nutella from a few chefs circulates on the net; however it remains complex and requires a wide variety of ingredients – some of which seem ultra processed like milk powder.

But starting from the recipe base and then looking for simplifications as always, I end up with a version “more accessible ” to those looking for variants: either a creamy texture, which requires powerful mixer / blender and with a glass bowl that can reduce to powder hazelnuts and caramel without exploding.(ie. kitchen aid and other expensive machinery) or have a less smooth and a little grainy in texture, but more achievable spread for people with a more  “normal” equipment like me.

On the tasting side, it was really an excellent discovery, but also a kind of disappointment: we find the excellent flavor of the hazelnut, but if you are a lover of industrial nutella “to quote my husband – “it is very good, topped on pancakes, but it is not the actual nutella. We can’t exactly remake the chemical composition of industrial Nutella with all natural ingredients, which is perfectly fine with me and is actually recommended if you care about your health.

In short, I will show you the recipe, to test if you are in a mood for making stuff at home like my self.

I actually prefer it to Nutella- and trust me, I know my Nutella. I spent a week in Rome eating peanut butter and Nutella sandwiches and Nutella gelato. Even Santa knows about my obsession… that’s probably why I got a jar in my Christmas stocking one year.

Take toasted hazelnuts, dark chocolate or raw cocoa nibs, a few other ingredients detailed below, get them through the blender and you get a great homemade chocolate spread, your own homemade Nutella cream in a way. The good news is that you decide what it consists of! Spread with moderation on your slice of breakfast bread, it’s a great way to start your day, isn’t it. Easy Homemade Nutella Recipe – Better than store bought Nutella

Ingredients:

  • 1 cup hazelnuts
  • 1 teaspoon vanilla
  • Dash of salt
  • Pinch of cinnamon (it works!)
  • Oil as needed (I used about two tablespoons)
  • 1/4 cup chocolate chips, melted

Directions:

  • Toast the hazelnuts at 325 degrees for 15 minutes. If you want to remove the skins, feel free to do so, but it will still be creamy if you don’t.
  • Process the hazelnuts until creamy. I found hazelnuts even more difficult to butterize than almond butter, so have patience! I would recommend adding half a tablespoon at a time.
  • When the hazelnuts have turned into butter, add the vanilla, salt, and cinnamon and process until combined.
  • Add the hazelnut butter into the bowl with your melted chocolate and stir until combined.

This is all that remained today, if that gives you an idea of how good it is.

  • Ease of Butterization- It took a super long time (20 minutes?) to turn into butter, but totally worth it.
  • Consistency- Fairly drippable right after it’s made, but firms up nicely in the fridge, if that’s the way you like it (that’s what she said)
  • Sweetness- Sweet! Not as sweet as Nutella, but sweet.

It’s pretty phenomenal on top of banana soft serve… just saying!

Notes:

With its short list of simple ingredients, our homemade Nutella stands out from the commercial one. It also contains almost twice as much sugar! For an even less sweet result, replace milk chocolate with dark chocolate.

In addition to being a little less expensive, almond and hazelnut butter is much easier to find than pure hazelnut butter. And in this recipe, one or the other does just as well! You can also use another nut butter that you already have at home. And in case of nut allergy, use nut-free butter such as pea or soy butter.
