Easy Tomato-less Guacamole Recipe

Anyway, this week’s recipe is deceptively easy- it almost doesn’t even warrant a recipe. I kind of assumed that guacamole was a really basic recipe that was made the same way every time, until I found out that my family puts mayonnaise in it. Say what?!

Avocados and I have a love / hate relationship. In fact, I’m usually not a huge fan of guacamole to begin with. Maybe it’s because I’ve been eating a recipe that has mayonnaise in it, or maybe it’s because I hate the tomatoes that are in most guacamole recipes. Whatever the reason, I usually stay away from it- but when I saw avocados on sale at the store today, I snapped them up and set out to make a version that suited my taste buds!

Tomato-less Guacamole

Ingredients:

  • 2 large, ripe avocados
  • 1/4 yellow onion, chopped
  • 1/4 cup cilantro, stemmed and chopped
  • 2 cloves garlic (or 1/2 tbsp dried garlic powder)
  • Juice of one lemon

 

Directions:

  • Using a large spoon, scrape the flesh of the avocado into a large bowl and mash.
  • Add the onion, cilantro and garlic powder. Squeeze the lemon juice on top and mix, mix, mix!

 

No mayonnaise or tomatoes in this guacamole! I hate mayonnaise for reasons I can’t even go into. Just trust me, it’s gross.

Do you need another reason to make this? Avocados are really good for you- they’re full of healthy fats, fiber, and they have more potassium than a banana!

If you want a ripe avocado, choose one that has dark flesh and gives slightly when you squeeze it. Don’t worry about looking weird squeezing avocados in public!

If you want them to ripen quickly, put them in a paper bag on your counter. Or you can hide them from your brother’s creepy ex-girlfriend in your room and totally forget about them for a week… they’ll ripen pretty quickly that way too.
