Homemade Chocolate Hobnobs Recipe

Below I will show you an easy Chocolate HobNobs recipe (chocolate coated oatmeal cookies) and a traditional hobnobs version. So, check them out.

First, about the Chocolate HobNobs version.

It is with pleasure that I share with you the latest recipe I made here for my blog.

As a teenager, I made a few trips to Britain and I keep an emotional memory of it. This is where I discovered the “Digestive cookies“. It is the must to accompany a cup of tea and these are the essential cookies to prepare the base of cheesecakes.

If you don’t know why they’re called them “Digestive cookies”, it’s because they contain sodium bicarbonate that should help digestion.

Much later, my friend introduced me to the Hobnobs cookies sold by a super-well-known brand in Britain. I fell for their rustic texture and crunchiness. They are prepared with oat flakes, my sweet sin. We always buy some with every trip to Britain and they have become one of my favorite companions for my afternoon cup of tea.

They are available in natural version but also topped with milk chocolate or dark chocolate.

Making them at home has been trotting in my head for a while with a dozen other projects I’m working on currently.

It’s made for the British corner of Yummy and the house is delighted to see our cookie box filled for a few days again.

The result is really very close to the originals. They’re just darker because I used full cane sugar.

Easy Homemade Chocolate Hobnobs Recipe

Ingredients for about 25 Cookies

  • 100 g of flour T55
  • 100 g of semi-complete flour T110
  • 180 g of oat flakes
  • 170 g of butter half-salt
  • 125 g of whole cane sugar (muscovado)
  • 1 tbsp Golden syrup
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3 tbsp milk
  • 200 g of dark chocolate to coat the cookies

How to make these beauties?

Melt the butter and Golden syrup in a saucepan and let it warm.

Put the oat flakes in a Blender type robot and then operate it for a few seconds, just to slightly reduce the flakes.

Add flour, yeast, baking soda and sugar and mix for two seconds.

Add the butter and Golden syrup mixture, milk and operate the robot, until a ball of dough forms.

Spread the dough between two sheets of baking paper (or stretch film), on a thickness of 0.5 cm.

The dough is very soft, make it cool for 30 minutes.

Preheat your oven to 165°C

Make circles of 6 cm and place them on a non-stick baking tray.

Bake for 15-18 minutes. Shortbread is dark enough, to find out if cooking is enough, you need to be able to move them on the plate by pushing them slightly with your finger.

Cool them on a plate.

When the cookies are cold, melt the chocolate and temper it (See note).

Add a teaspoon of melted chocolate to the center of each cookie, spread with the back of the spoon and then equalize with your finger.

Allow to harden at room temperature before putting them in a metal box in which they will be stored for 5 days.

Note on chocolate: I tempered my chocolate to have a more crisp and bright result. For this, I melted it to reach a temperature of 45 to 50°C, I cooled it to 29 ° C and then I raised it to 31/32°C.

homemade Belgian speculoos recipe

I’m a big fan of speculoos. So, when a friend “challenged” me to make this speculoos recipe, I set out in search of the perfect recipe. I started with an overview of what is commercially available. To study its composition and keep only the best essential ones and make the real thing.
Then I searched around to find the history of the cookie, the origin of its name, etc.
Finally, I went through culinary blogs, a lot of them, until I found a recipe that would stick to my “quality” criteria and whose photo would be tantalizing. These are very similar to my homemade hobnobs cookies, which I made recently.

As for the history of speculoos, here’s what I found:

History of Belgian speculoos

The origin of the name of this biscuit is controversial. According to some, “Speculos” would come from the latin “species” which means spices or “speculum” which means mirror. The Speculos would be an image, the “reflection in a mirror” of a character.

Others put forward the word “speculator”, which means Bishop. It would then be Saint Nicholas, who is celebrated on December 6 by eating cakes in the form of different items(donkey, saint, flowers, etc..). Finally, a Dutch cake made in the 17th century with exotic spices from India and Africa, called “speculaas”, could also be the origin of the Speculos. The name “Speculas” is still used in England, Holland and a little Belgium. The ending ” as “gradually turned over time into “os”, in order to bring to the name a more francophone sound and therefore easier to pronounce by the Wallons and the inhabitants of the north of France. Today, the French write the name of this biscuit : “Speculos “, the Belgians : “Speculaus” or ” Speculoos “.”

One thing is for sure: speculoos (for me) consists of flour, butter, sugar, eggs, spices (mostly cinnamon) and a hint of baking powder. Be careful, in most recipes, brown sugar is found. Beware: what the Northerners call brown sugar is actually vergeoise (sugar cane does not grow easily in Belgium, while beet…). I used brown vergeoise sugar.

:
(for a good amount of cookies)

  • 250 g flour
  • 175 g butter at room temperature
  • 175 g of Brown sugar
  • 1 egg
  • 1 teaspoon baking powder
  • 1 tablespoon cinnamon
  • 1 pinch of salt
  • 1 pinch of nutmeg
  • spices, to taste

In the bowl of the robot equipped with the “kneading” hook (or in a large salad bowl), mix all the ingredients. Mix thoroughly until homogeneous. Form a ball with the resulting dough. Wrap the ball in food film and refrigerate for at least 2 hours.
Take out the dough. Spread it, on a sheet of baking paper, on a thickness of 4 or 5 mm. cut out shapes (the easiest way is to make rectangles with a knife, the dough is soft enough) and bake at 160°C (thermostat 5) for 15 minutes. Allow to cool completely before tasting.

Verdict: fabulous. Crunchy (almost brittle) on the outside, shortbread on the inside, friable but not dry. Marvelous. Fragrant, perfect. I want to do it again, right now, right now.

I leave the ending word to you, sitting on the couch and brawling 🙂

And again, I still would love me some speculoos!.

Homemade Oreo Cookies Recipe

Hey everyone, today I will show you a wonderfully easy recipe for homemade Oreo cookies. We all know these little cute American Cookies sandwiches with very intense chocolate flavor and topped with a generous white cream in between. My daughter loves them and so do I (Although I’m having more and more trouble with the taste of store bought Oreo cookies).

The homemade version we made at home, well I can tell you that these cookies were swallowed all up in just a few hours and I made quite a lot. All the people who have tasted them, found this homemade version much better than the store bought ones!

Though those cookies are slightly too sweet for me, but everyone told me that there’s nothing wrong to have a sweet cookie from time to time and yet again it can’t be worse than the store bought version as there are no additional flavorings, preservatives or other artificial stuff!

Homemade Oreo cookies?

So, why buy cookies from the store, when it’s so simple to make them yourself at home, right? In few steps I will show you how to prepare Oreo-type cookies that are as good as those from the trade. Psst ! I must admit that I think they are even better 😉

Below I will share the homemade Oreo recipe (yes it is possible, easy, fast and it is almost too good to be true).

Cooking is my passion, and is something I like to share with my readers, but right now with the current virus epidemic craze situation and like many of us I have a loose head and a heart in crumbs scattered all over. So, I’m having a hard time trying new recipes lately. But no worries I here and will do my best to show you how to make homemade oreo cookies.

In order not to leave too much room for this sadness and so that optimism and love prevail over this heap of horrors I finally decided to make you a home made Oreo cookies to soothe the wave of lonely home locked difficulties that hit us far too hard these days.

I’ll be honest, I’m a crazy Oreo lover, but you already know this because I’ve already talked about it here before.

And who with their mind and properly functioning taste buds doesn’t like oreo cookies? My kids love them, they love them with all the Ice creams, yogurts or sauces(whatever you throw it at), lol. When I ask them if they want a smoothie, they ask me to put oreo cookies in it.

oreo cookie smoothie

If I want to make an ice cream, they prefer it with oreos in it…can’t blame them though.

oreo cookies cream ice cream

In any case, it’s the number one cookie used at our home, although I’ll be honest, I prefer speculoos … but I can’t force my preferences on our little ones.

I even made oreo cheesecake once, it was wonderfully delicious:

oreo cookie cheesecake

How I came up with this homemade Oreos

Many people make homemade Oreos with a white chocolate cream inside, but actually it’s clearly not white chocolate that makes them like real ones.

With white chocolate the recipe is still very good, but it does not look and taste enough like Oreos, the real ones that we find in the stores and that make us addicted!
I tested literally a hundred recipes, and unimaginable combinations in order to never really be satisfied (which explains why I still had not posted them on the blog).

In the end, I found the recipe variation I was looking for and I have to say that we are very close to the recipe of real Oreo (this cream with this little hint of coconut is just magic)

Personally, I find the real store bought Oreo biscuits a little too sweet for my taste, but it did not bother me more than that (the next I will lower the amounts of sugar and I will return to this article to make the necessary update ).

I leave you with this recipe which is a real treat and I think your children will rather love it (and you too) 🙂 as it is much healthier than the filth that can be found in the market.

In short, if you have a some spare time (because you will see it is rather fast and not needing too much work )!

So here is the recipe which you wouldn’t want to miss!

Easy Homemade Oreo Cookies Recipe

Preparation time 20 minutes
Cooking time 20 minutes
Total time 40 minutes
30 servings

Ingredients

homemade oreo cookies ingredients

For the oreo cookies:

  • 260 g flour
  • 90 g unsweetened cocoa powder
  • 1/4 tsp baking soda
  • 1 pinch of salt
  • 225 gr unsalted sweet butter, softened at room temperature
  • 160 g brown sugar
  • 1 egg yolk (optional, because if your dough is sticky enough, the yolk will not be needed)

For the vanilla cream filling:

  • 125 g softened butter at room temperature
  • 210 g icing sugar
  • 1 teaspoon vanilla extract or 2 sachets of vanilla sugar

Instructions to make the cookies:

In a large bowl, sift together flour, cocoa powder, baking soda and salt.
Beat to combine and set aside.
In the bowl of a stand mixer equipped with the paddle, beat the butter at medium speed until smooth (about three to five minutes).

stand mixer oreo cookie dough
Scrape the edges of the bowl, add sugar and beat for about 2 minutes after that.
Add the flour / cocoa mixture in 2 steps, whole beating at low speed for about 30 seconds after each addition.
– then continue beating on low until the dough gathers on the sides of the bowl. (Note: my dough looked very dry so I added 1 egg yolk and continued mixing until the dough softened.)

Place the dough on a lightly floured surface-form a square block .

oreo cookies dough preparation

Cover tightly with a plastic wrap and refrigerate for at least an hour. (The dough can be refrigerated for up to 2 days.)

Place a grate in the middle of the oven.
Preheat the oven to 160°C.
Prepare two baking sheets of parchment paper.

Take out the chilled biscuit dough – if it is too hard, let it stand at room temperature until it softens.

knead oreo cookie dough

Flour a large working area. {You can spread the well-floured dough between two sheets of baking paper. }
With a rolling pin, press the top of the dough, from left to right, to start flattening, then put the dough 90 degrees and repeat (this helps prevent cracking).

Roll out the dough not too thick, and not too thin either, then roll it over with a roller a pattern.
Use a fluted piece cookie cutter and cut as much as possible-be sure you have an even number to make sandwiches.

Collect the dough drops and repeat the operation.
Bake for 15-17 minutes, turning the plates half-baked, until the cookies just begin to develop small cracks on the surface and emit a lovely “chocolate” smell.

Remove the molds from the oven and place on a grate. Let the cookies stand for 10 minutes – then transfer them to the grate until completely cooled.

While the cookies cool down, make the cream filling :

In the bowl of the blender, put the soft butter, beat at high speed until creamy consistency, about 1 minute.
Add icing sugar and vanilla. Beat at low speed for 1 minute, then pass at high speed and beat for 1 minute, until creamy consistency and everything is well amalgamated. The cream is thick.
Spread the vanilla cream, using a sleeve pocket, on a cooled chocolate cookie, then place another on top, and press to evenly distribute the cream, between the two cookies.
Repeat the operation with the rest.

To make a double oreo, do the same operation, fill cream with the sleeve pocket on top of an oreo, and place a chocolate cookie on it, squeeze a little, you get a double oreo.

wheatgrass juice recipe

With this easy wheatgrass juice recipe you will discover how to make a healthy juice from fresh wheatgrass at home(you can user wheatgrass powder too) and the multiple benefits of this wonderful healthy drink.

If you’re not familiar with wheat grass (a sprouted wheat seed called wheat grass), you might think it’s strange that someone would suggest you eat grass.  You are not a cow, after all, right ;-). But the young green fresh Wheatgrass is actually a pretty delicious and nutritious super food that is beneficial to any healthy diet.

Even better, you can grow your own wheat grass with minimal effort.

It may be obvious, but:

What is wheat grass?

Wheat grass is the young edible grass of the wheat plant (triticum aestivum). It is gluten-free and is accompanied by therapeutic properties. Most of the time, it is pressed or ground into a very fine and emerald green powder, or put in capsule.

Wheat grass, also known as “Liquid Sunshine”, is found in warm regions, there are some local producers in France in the South. Many people choose to grow plants and wheatgrass indoors, where plants can survive and thrive.

Once you realize how easy and fun it is to germinate your own wheat grass at home, you are able to make yourself an almost unlimited stock of this super-super food.

For this, follow this guide..

How to grow wheat grass at home?

First step: gather the necessary materials:

What you will need:

  • organic wheatgrass seeds
  • agroforestry seeds…
  • Compo organic soil for vegetable garden and seedlings
  • Garden tray
  • water spray for Garden.

Organic Agro seeds: starting with the highest quality seeds will give a better and more nutrient dense crop.
Organic soil and Fertilizers: always use compost and organic fertilizers to avoid exposure to toxic products.
Plastic culture tray with holes: so you can reuse it again and again.
Spray: this is the perfect way to keep your shoots moist, but not too watered.

Second stage: pre-germination

For a faster and larger harvest, pre-germination is absolutely necessary.

Place enough seeds to cover the bottom of your plastic tray, without overcrowding.
In a glass bowl, rinse the seeds and place them in a container with 3 times more water than seeds.
Cover the container with a dishcloth and let the seeds soak for 10 hours.
After 10 hours, drain the water and repeat the same soaking process.
Check that the seeds have sprouted well from 30 to 50mm.

Stage three: preparation of the tray

Use paper towels to cover the bottom of the plastic tray.
Fill the tray with a combination of ½ moistened organic oil and light compost up to 4cm from the depth of the tray.

Fourth stage: planting

Arrange the seeds evenly on the plastic tray.
Gently push the seeds into the ground.
Place the seed tray in a place that has indirect light and good ventilation.

Step 5: care for your plants

Place a piece of slightly damp newsprint on the seeds until they reach about 3cm
Water the new shoots twice a day with a spray until the shoots reach 3cm.

Step 6: Harvesting

Your wheat grass should reach 15cm by day 9 or 10. By that time, she will be ready for harvesting !

Avoid any mold that may have developed by cutting over the place where the mold begins. Use sharp and clean scissors to harvest your wheat grass. A 50 * 25cm tray will produce enough grass for 350ml of wheat grass juice.

You can start watering again for a second and a third harvest. Note: the shoots will not be as tender as the first ones.

What to do in case of mold?

As mentioned above, it is possible that if your environment is humid, your shoots will develop mold. Although mold is harmless, it can quickly disgust you.

Here are some steps you can take to prevent mold from becoming a problem.

Soak the seeds for a longer period of time, 12 hours work well. The seeds will grow more and have better germination and much shorter germination time.
When placing your seeds on the tray, be especially careful to leave a gap between the seeds for good ventilation.
Be very careful not to water your shoots too much.

Try to water your shoots from the bottom by placing a collector tray without holes under the wheat grass tray. Make sure there is water in this collection tray and only lightly spray the top of the shoots.

Health benefits of wheat grass juice

Here’s just one amazing statistic to start with: 50ml of wheat grass juice have the nutritional equivalent of 2kg of raw organic vegetables! Nuff said!

Ok, here are few more benefits:

But what is actually IN the wheat grass?

Wheat grass contains the following important nutrients:

  • antioxidant
  • chlorophyll
  • iron
  • magnesium and calcium
  • amino acids
  • vitamins A, C, E, E
  • selenium

Here are some benefits of wheat grass supported by science.

Alkalinization and absorption of nutrients

Wheat grass helps the body to achieve and maintain an alkaline state that promotes well-being and drives away diseases. It is known that cancer and other diseases thrive in an acidic environment. In addition, wheat grass helps the body absorb essential nutrients such as vitamin C, vitamin E and electrolytes.

It is mainly the presence of chlorophyll that gives the crop its ability to promote an alkaline environment. This balances the body’s pH and protects the cells. This is why the consumption of chlorophyll is associated with a quantity of anti-aging effects such as good weight management or healthy skin.

Reduces free radical damage

The powerful antioxidants contained in wheat grass reduce the risk of damage from free radicals and oxidation. According to research, wheat grass has a higher ORAC score (antioxidant score) than many other natural or vegetable extracts.

Wheat grass prevents damage from oxidation of the liver and protects mitochondria in cells. This results in a reduction in inflammation and a decrease in the risk of diseases, including cancer, heart disease and liver disease.

Protects from cancer

Scientists from the integrated unit of oncology and palliative care in Israel have discovered that wheatgrass has a place in the holistic treatment of cancer and can benefit the entire immune function. Studies have even shown that wheatgrass can promote apoptosis (destruction of cancer cells). In addition, wheatgrass can also help mitigate side effects of chemotherapy, such as fatigue and malabsorption.

Other notable health benefits of wheat grass juice :

  • regulates blood sugar
  • can help you sleep better.
  • can help heal wounds.
  • prevents harmful bacteria from coming into contact with wheat grass.
  • can renew and replenish tissues.
  • removes toxins from the body.
  • contains thirteen essential vitamins and minerals.
  • oxygen to the body.
  • rebuilt the blood.
  • improves digestion
  • improves night vision
  • promotes healthy metabolism

How to make its juice from wheat grass?

First and foremost, it is important to use the right type of machine if you are going to make juice from wheat grass. Juice extractors that grind wheat grass will damage it. You will need a manual juice extractor that will preserve all the benefits of the herb.

To make juice from wheat grass:

Harvest and wash about 50g of wheat grass to get a small glass of about 50 ml (a shot of grass)
Chop the grass into small pieces.
Pass the grass into the juice extractor and drink the juice immediately to preserve all the nutrients

Here are some natural remedies based on wheatgrass juice, Ok, I do not guarantee that all this works, but you can always try:

If you never tried making any of the hummus recipes listed below but always wanted to make one, then just pick your favorite and you won’t regret. All the hummus recipes are easy, budget friendly, healthy and incredibly delicious.

As a traditional Middle Eastern delight, nowadays hummus has become the favorite appetizer in our western kitchens.

This delicious homemade hummus, a kind of side dip sauce (perfect for appetizers, tartini and burgers) is based mostly on chickpeas, olive oil, tahini and spices.

different types of hummus

But if you’re used to the original basic hummus recipe it’s time to try some different variantions of the hummus recipe by using eggplants, edamames, beets and many other ingredients.

Read our homemade hummus recipes below and try to make it a different one with your personal touch each time.

Homemade white bean hummus recipe

white bean hummus recipe

This is one of the most natural and interesting variants of hummus. In general the beans we prefer are black beans that give the sauce a purple final color, but Cannellino and Borlotto beans will do the trick here.

The ingredients and methods of preparation are similar to those of classic hummus :

  • 250 grams of beans (previously cooked)
  • 1 coffee spoon of cumin
  • 1 tablespoon or 1 and a half spoons of tahina
  • sweet paprika
  • lemon juice
  • pepper and salt
  • extra virgin olive oil

It is enough to pass everything to the blender or chopper and add the spices at the end. Adjust with oil if it is too dry.

And here is another option if you want to get inspired: Homemade hummus with beets

Homemade Beet Hummus Recipe

The color will impress you, the flavor will too: this is the homemade hummus with beets, excellent recipe especially when the beets are in season. In this case, to make your sauce more creamy it will be necessary to add chickpeas.

To prepare hummus with beets you will need:

  • 300 g of beets (pre-cooked or pre-cooked)
  • 200 g chickpeas (previously cooked)
  • 1 coffee spoon of cumin
  • 1 spoon / 1 and a half spoons of tahini coffee
  • Juice of one or half a lemon
  • Pepper and salt
  • Chopped raw chives

Blend at high speed as beets can be quite hard sometimes if not cooked properly.

Eggplant Hummus (BABA GANOUSH) Recipe

Eggplant Hummus (BABA GANOUSH) Recipe

This variant is one of the most famous, especially because the eggplant hummus is also known as Baba Ganoush, famous Middle Eastern sauce.

The video above briefly explains what it takes to make it :

  • 2 large cooked eggplants
  • 2 tablespoons tahini
  • parsley
  • garlic clove
  • salt and spices
  • extra virgin olive oil

Blend everything in your blender and serve with chopped parsley on top.

Edamame Hummus Recipe

edamame hummus recipe

Edamames are “immature” or green soybeans, which are very rich in protein. In this case you can only use edamames that have a consistency a little more compact than beans, but to make your sauce more creamy we advise you to add a few chickpeas.

  • 400 g of edamames (cooked or thawed)
  • 150 g chickpeas (previously cooked)
  • 2 teaspoons tahina
  • 1 coffee spoon of soy sauce
  • Juice of one or half a lemon
  • Pepper and salt
  • Sweet Paprika
  • Extra virgin olive oil

To give another twist to your edamames hummus, add grated fresh ginger before mixing everything.

HOMEMADE HUMMUS WITH CHICKPEAS AND KOMBU ALGAE

And to put the turbo to your home hummus, add to the normal recipe of kombu seaweed, which will bring a marine freshness.

  • 200 grams of chickpeas (previously cooked)
  • 1 leaf of kombu seaweed
  • 2 tablespoons tahina
  • 1 clove of fresh garlic
  • Half a lemon
  • Sweet Paprika
  • Fresh parsley
  • Extra virgin olive oil

Blend thoroughly and serve with herbs and olive oil.

Lebanese Hummus recipe

Lebanese Hummus recipe

And now I offer you a Lebanese hummus recipe, a delicious healthy dip sauce from the Middle East and a creamy paste based on well cooked chickpeas, lemon juice and tahini that is served as an aperitif with pita bread. Mixing these ingredients gives a really smooth and velvety puree.

The word hummus literally translates from Arabic and means chickpeas. Its origins are suspected to be from the Shami region (Lebanon / palestine / Syria / Jordan).

A few years ago a group of Lebanese chefs made the largest plate of hummus in the world weighing more than 2 tons.

The hummus is the best known meze(appetizer) in Lebanon. An easy and economical recipe that will bring some oriental touch to your dinner with friends or family.

The amount of garlic is to taste, personally my husband and I love it, but you can reduce the amount.

If you use dry chickpeas:

Dip the chickpeas in a wide container filled with water to soak overnight (it is necessary that the water exceeds the level of chickpeas)

The next day the chickpeas will swell. Pour them into a pot or deep pan and add water and place on the fire.

When the water begins to boil and a foam will form on the surface, foam it. Reduce heat and simmer by placing the lid but leaving a small opening. Cook for 1h30 (add water as needed).

At the end of cooking one must be able to easily crush chickpeas. Keep a small amount of cooking water for further steps below.

If canned chickpeas are used:

Drain the chickpeas (keep a small amount of chickpeas water) and remove the skin, it’s a little long, Sir will help you 😉

Place the chickpeas in a mixer, add the peeled garlic clove, lemon juice and tahini sauce. Start the blender and blend  while adding the olive oil in the fine stream until a homogeneous and velvety creamy mixture is obtained. Add salt and pepper.

If you find that the hummus is too thick, add some of the reserved leftover chickpea water.

Serve in small hollow plates by sprinkling cumin, paprika, chopped parsley and drizzling with olive oil.

Serve with pita bread or flatbread as it’s a traditional food ad is best enjoyed that way!

Enjoy!

The Souvlaki pita, the excellence of Greek fast food! Find how to make them with the easy souvlaki pita wraps recipe and barbeque chicken souvlaki recipe for skewers below.

In large cities such as Athens or Thessaloniki, but also wherever fast food is found, each district offers at least one place where you can find souvlakia or pizza, in order to satisfy your cravings of fast food. While the pizza is ideal for a relaxing evening at home, spent watching a movie, The souvlaki can be enjoyed wherever you want.

The souvlaki pita which is similar to Mexican tortillas or falafels represents the national icon in Greece. It can be eaten as well at lunch, dinner and even breakfast after a long night out. You can find this simple and easy meal anywhere, by the sea or in the mountains. In Greece the souvlaki often accompanies you on an evening walk; it is a wonderful treat for children and a staple for students. It is naturally part of the Sunday barbecue. If we were to name a king of Greek fast food, it would undoubtedly be the souvlaki! It is tender, tasty, easy to prepare and ready to serve when you do not know what to cook.

The easiest Greek souvlaki for a barbecue is made with pork skewers, a great treat for everyone. Traditionally the skewer was very simple: small pieces of pork were strung on a skewer and cooked over an open flame. Then add a dash of lemon and sprinkle with a little dried Greek oregano.

For a wrap (a kind of rolled sandwich), the preparation is also very easy. The filling of the Greek pita usually consists of slices of tomatoes, pieces of onion and a good dose of tzatziki. Obviously for a wrap with a pita, as for any sandwich, the only limits are those of your imagination. You can perfectly add salad and any sauce to your liking to get a very hearty meal.

Recipe for souvlaki skewers with pork

Recipe for souvlaki skewers with pork

Cut the pork into pieces about 2cm thick. Put them in a container and add olive oil, lemon juice, mustard and oregano. Mix well and let stand in the refrigerator for at least 30 minutes.

Take the wooden skewers and cut them to the size of your serving dish. Gently thread the pieces of pork and put  on the grill.

Heat your grill to high temperature and cook the skewers for about 8 minutes, turning them from time to time to get perfect baking and beautiful golden color.

During this time, you can warm up the pitas on part of the grate. Brush them with olive oil and season with salt, pepper and oregano. Pitas require 1-2 minutes of cooking on each side.

Ten short minutes will be enough to prepare these delicious homemade souvlaki pitas wraps. Take the grilled chicken cubes from your souvlaki skewers, generously spread the tzatziki sauce, garnish with vegetables and garnish with a Greek salad! This quick and easy recipe will make you travel to Greece!

Before serving you can drizzle with olive oil if desired and garnish with a sprig of dill.

There are several ways to enjoy this tzatziki: on small toasted bread, as an aperitif, in starter dessert like amuse-bouche or hors d’oeuvre. But it also serves as a sauce with fresh vegetables simply steamed, a fish fillet or on a grilled meat.

Thus disgorged, the cucumber is perfectly digested. This vegetable does not shine with its wealth of vitamins and mineral salts, but mint and parsley contain a lot of them. And yogurt brings you calcium. In addition, it is a preparation without an ounce of fat, totally “Slimming”!

Easy Tzatziki Recipe ingredients

6 ways to serve tzatziki

Tzatziki is the perfect sauce for dipping crispy appetizers, crackers, but also chips, fresh or crispy toast, or baguette. In short, this is the perfect aperitif!

Your tzatziki can also be used as a sauce to accompany grilled chicken, meat (such as lamb skewers or pepper steak) or even fish.

Go for some tzatziki to take away. Fill a glass jar with 1/4 tzatziki and put in it cucumber and carrot rings. Close the lid and take it with you for a picnic or as a snack on the train.

Equally delicious: replace the cucumber with Apple for a fresh, tart taste, or beetroot. The latter gives your tzatziki a slightly sweet taste and a beautiful pink color.

Another possible combination is tzatziki with nuts, any nuts or seeds are fine. Finely chop the nuts, fry them very briefly in a frying pan and add them to your standard tzatziki recipe. Keep a handful of chopped nuts to sprinkle them on the tzatziki as a finishing touch.

Finally, tzatziki is the ideal seasoning for a salad. Prepare a Belgian version of the Greek salad with fresh salad, red onion, cubes of fresh tomatoes and cucumbers, and a spicy goat cheese.

The daiquiri cocktail: the origin of one of Hemingway’s favorite cocktail blends

The Daiquiri cocktail was first mentioned in 1920 in the book This side of Paradise by F. Scott Fitzgerald. The main character consumes four Daiquiris and very quickly regrets it after an old man sitting next to him turns into a “purple zebra”.

The daiquiri cocktail is one of Hemingway’s favorite cocktail drinks (with the Bloody Mary cocktail and the Singapore Sling) and has also evolved the original Daiquiri recipe. Indeed, while he was passing by the Floridita bar in Havana (an establishment that enjoyed great success with the Americans during the prohibition), the author nicknamed ” Dad ” by the bar team, asked the bartender to prepare him a daiquiri with a double dose of rum and without sugar. The daiquiri Floridita cocktail was then renamed “Papa Doble”. However, Hemingway Daiquiri also contains grapefruit juice and Maraschino.

Daiquiri and calories ? It takes almost 176 calories for a glass of Daiquiri with lemon, which is more than for a Piña Colada! This is a lot, more reason to consume this drink in moderation.

And concretely, how to make a strawberry daiquiri ? The answer is below.

About the recipe for Strawberry Daiquiri

Unlike the lemon Daiquiri recipe that is made in the shaker, the Strawberry Daiquiri recipe is made in the blender (a strawberry daiquiri in a Thermomix, it is also possible !). The goal being of course, to get to make a puree of frozen strawberries(we choose them frozen to bring a little extra freshness to the mixture).

So, in this mixer, Cuban white rum, strawberry liqueur, juice of green lemons, cane sugar syrup and frozen strawberries are poured… then mix everything for a few seconds with crushed ice. Then you’ll just have to serve it quickly in a pre-refreshed cocktail glass (or in which you’ll add ice cubes to make a daiquiri on the rocks).

Note that you can decorate your glass by adding into it a piece of strawberry, or replace the frozen strawberries with strawberry juice and thus make a daiquiri with strawberry juice.

homemade strawberry daiquiri recipe

Variations of Strawberry Daiquiri

Raspberry Daiquiri, banana daiquiri , passion fruit daiquiri, mango daiquiri or peach daiquiri … The possible variations of the daiquiri cocktail are so many! You can, for example, make a strawberry daiquiri without alcohol by replacing Cuban white rum and strawberry liqueur with carbonated water or Schweppes Premium Mixer Tonic Original.

One of the other known variations is the Frozen daiquiri (and less famous, The Frozen Mint Daiquiri). It is a daiquiri with lemon that is prepared in the blender with a lot of crushed ice.

Daiquiri vs Margarita ? Like daiquiri, Margarita consists of juice of green lemons but, in the latter, rum is replaced by tequila and simple sugar syrup by triple dry.

Daiquiri vs. Mojito? Similarly, Mojito contains, like daiquiri, juice of green lemons, white Cuban rum and simple sugar syrup. Fresh mint, bitters Angostura and sparkling water or Schweppes Premium Mixer original Tonic also add to that.

Finally, if you like rum cocktails, do not miss the recipe Schweppes with  Lemon, ginger beer cocktail, Amber 1765 cocktail, Carribean Cooler cocktail and dark’n’stormy chocolate cocktail.

Alcohol abuse is dangerous to your health, so enjoy it and consume in moderation.

hibiscus tea recipe

You’ll love this wonderful and easy recipe for hibiscus tea, which makes an incredibly healthy and refreshing drink. No wonder this tea is so popular lately. With its lovely characteristic deep red color, it is consumed and loved all over the world, both for its irresistible flavor, and for its health benefits! And you can make it at home which is always a bonus :-).

A little bit on the history of hibiscus

The origins of hibiscus go way back to Sudan, but as we have already said, the first traces of the use of hibiscus as a drink and remedy go back to the ancient Egyptians. They thought that hibiscus water promoted sexual desire in women who were, therefore, forbidden to consume it.

hibiscus tea flowers dry

The plant was introduced to Senegal in the 19th century, to become the flagship drink of the whole of West Africa, with ginger juice and bouye (baobab juice). It is consumed for all occasions, parties, weddings, etc.

The whole plant is used, nothing is wasted with hibiscus as it is common with most natural plants and resources. The leaves are used in sauces, to give a slightly sour and acidic flavor, the stems are used to produce fiber, and the roots are also used as a natural remedy, present in many pharmacopoeias.

Today, the hibiscus flower is used mainly as a drink of course, but it has also a few other uses too:

– you can make a puree, sauce or hibiscus rosella jam as they do in Cameroon, Congo Kinshasa, Congo Brazzaville, Gabon, etc.
– in cosmetics, especially mixed with henna to color and make hair shine (see our article to prepare a mask with hibiscus)
– in food coloring, as a substitute for chemical dyes
– to make shoes shine: yes ! In Asia, the hibiscus flower is known as the shoe flower, because it is used to make shoes shine
– as an ceremonial offering: in India, they are offered to the Goddess Kali so that she fulfills the vows.

Types of Hibiscus

There are many different species of hibiscus, but we are going to look at the most common ones, which you can see in gardens and parks worldwide. Aside from being a devoted foodie I also love flowers and plants, so I also spend quite some time gardening when I have the time.

  • Native hibiscus.
  • Hardy hibiscus
  • Tropical hibiscus
  • Perennial hibiscus

Perennial hibiscus in best grown in non-calcareous, well drained, humus-rich soil. They find their place in solid soil, but require a cover of straw or ground leaves in winter to protect the roots from frost.

The exposure should be in a sunny place.

Plant preferably in spring with a large amount of soil and/or compost.

Annual hibiscus flower

Annual hibiscus can be planted in the open ground as early as May from seedlings sown in warm March. Water well.

A sunny or half-shade location is to be preferred but sheltered from the winds.

If your land soil is clayey, then amend it with compost and sand.

Roselle hibiscus

roselle flower

The hibiscus sabdariffa used to make hibiscus tea, also called Guinea sorrel or roselle, is a tropical perennial plant, native to Asia and the Pacific Islands, which grows up to 3 meters high and at least 2 meters wide. It produces many paper-like flowers that, when they fade and the petals fall, reveal the bright red chalice. Even though all the flower can be used to make the drink, only the calyx is usually used.

With hibiscus you can decorate your garden, your balcony, and flower your interior with hibiscus! This ornamental plant is covered with the sublime flowers and beautiful Shape of its Corollas, with shimmering colors.

Choosing a hibiscus by its main features

Hibiscus aside from making a wonderful tea is also a popular ornamental flower that has the following characteristics:

The hibiscus plant belongs to the family Malvaceae which has more than 200 species of hibiscus, and about thirty thousand varieties.
It is very popular for the beauty of its flowers of varying colors and shape.
The largest specimens of hibiscus can reach a height and span of 5 m.

Depending on the variety, hibiscus can be perennial or annual.

In our latitudes, only 2 species of hibiscus-declined in multiple varieties-are cultivable.

Among the outdoor hibiscus cultivable, we can mention for example the hibiscus syriacus or Althea, sometimes nicknamed “tree Mallow”. It is an outdoor hibiscus that can be grown quite nicely in your garden.

This genus of hibiscus includes shrub varieties that cover between July and October with single or double flowers, evocative of the tropics, with bright and varied colors. Their foliage has lapsed. This type of shrub to plant in the open ground, enjoys being placed in a well sunny area of the garden throughout the year. It also pleases in a tray at least 40 cm deep, to be placed on the balcony or terrace.

Here are some examples of hibiscus syriacus:

Hibiscus syriacus Duke of Brabant: double flowers of blood red color.
Hibiscus syriacus Woodbridge. Its pale red flowers, 10 cm in diameter, open in a trumpet.
Hibiscus syriacus Red Heart: flowers with dark red heart and white petals, 8 cm in diameter.
Hibiscus syriacus Blue Bird: pale blue flowers.
Hibiscus syriacus blushing Bride: large flowers with red heart and pale pink petals.
Hibiscus syriacus Kakapo: simple flowers of sustained pink color. Their shape resembles the peony flower.

Good to know: the hibiscus esculentus variety gives a fruit called “OKRA”, famous for its food and medicinal use.
Some examples of indoor hibiscus

The most sparing varieties of hibiscus should be grown indoors. These potted hibiscus will winter warm and can be placed outdoors during the summer.

Among these indoor hibiscus flowers , we recommend you :

Hibiscus sabdariffa, sometimes called “Guinea sorrel”: to be planted in a medium-sized tray. It provides abundant flowering. Its large Corollas have a dark red heart and its pink-edged petals are yellow. If it enjoys a maximum of sunshine during the summer – provided it is watered abundantly – it should be put indoors as early as October.

Hibiscus Rosa siniensis, emblem of Malaysia:

To be grown in a pot of moderate size, inside the house as soon as the outside temperature drops to 6°C.
More commonly called “China Rose”, it produces – under good growing conditions-a flowering throughout the year.
Its large flowers of red, cream, pink, yellow or orange are very ephemeral since they last only for a day. But the flowering of this hibiscus is constantly renewed.

You can grow it outdoors, even in winter, if you live in a Mediterranean region. However, consider covering him with a wintering veil and mulching his foot in case of severe winter, because the cold can be fatal.

Good to know: the fruit of hibiscus sabdariffa is dried and then infused to prepare an antiseptic and diuretic drink, very popular for its pink color. In Egypt, this delicious infusion full of benefits is called “Karkade”, and in Senegal, “Bissap”.

What is bissap (a traditional hibiscus tea drink)?

Bissap is the name given in Senegalese wolof language to an infusion of hibiscus sabdariffa flowers, but this drink is also found in many other countries thorough the world.

Here are the most widespread designations of the hibiscus tea in the world: Karkade (Egypt), agua de Jamaica or Jamaica juice/water( Mexico), folere (Cameroon), gooseberry country (Antilles), dableni (Mali, Ivory Coast, or Burkina), karakandji (Central Africa), Zobo (Nigeria), Ngai Ngai (Congo), rose tea, Tea of the Empire, drink of the Pharaohs, etc.

Green (or white) hibiscus flowers or calyces are often used for the preparation of sauces and different condiments, and it is common to use the red flowers to make hibiscus syrup.

Be careful though, as there are more than 200 species of hibiscus in the world, they are not all consumable, and only the infusion of hibiscus sabdariffa gives a proper hibiscus tea. Some people also make confectionery like candied hibiscus which can be enjoyed just like a candy.

What are the health benefits of hibiscus tea?

Hibiscus infusions have been used as a remedy since ancient Egypt, where it was used in particular to lower body temperature in case of heat stroke, as an aphrodisiac, and against insomnia and agitation.

They are still used today in many traditional medicines.
Action on blood pressure and heart health

Hibiscus tea has hypotensive properties to combat high blood pressure, and protective properties for the heart.

Studies have been conducted to prove the effectiveness of hibiscus as a natural treatment for high blood pressure. In 2013, a study of people with diabetes and hypertension who consumed 3 glasses of hibiscus tea per day, showed, after 4 weeks, a significant drop in blood pressure.

A recent Boston University study of 65 healthy men and women aged 30 to 70 confirmed that drinking 3 cups of hibiscus tea or juice a day for at least 6 weeks reduced systolic blood pressure by more than 7 %.

Another study showed that hibiscus sabdariffa infusion may even be more effective than hydrochlorothiazide, a molecule widely used against hypertension, but without showing side effects.

No studies have shown any undesirable side effects related to the consumption of hibiscus herbal tea (also known as Karkade tea), if this consumption does not exceed the recommended amounts.

What hibiscus tea is good for

Highly effective on the level of cholesterol and triglycerides

Hibiscus tea is widely used, especially in Egypt, to reduce cholesterol and triglycerides in people with metabolic syndrome.

Indeed, a study has shown that hibiscus juice helps people with dyslipidemia to better balance their cholesterol and triglyceride levels. Dyslipidemia is characterized by high plasma cholesterol, triglycerides or low HDL (good cholesterol) cholesterol.

By fighting bad cholesterol (LDL) and triglycerides, hibiscus helps prevent the risk of developing Type 2 diabetes, heart disease and stroke.

By the way, a study showed that hibiscus extract is an excellent natural remedy for reducing cholesterol and triglycerides in people suffering from metabolic syndrome.

Strong Antioxidant Action

Hibiscus infusion is an excellent source of antioxidants, including anthocyanins of the polyphenol family, natural pigments that give the flower its beautiful red color.

These antioxidants make it possible to protect the cells of the body from the effect of free radicals, molecules that lead to premature aging of cells and the development of certain diseases related to aging: cancers, cirrhosis,

Parkinson’s, Alzheimer’s, and other brain issues.

Moreover, studies are being conducted to study the effect of hibiscus on cancers, especially leukemia and stomach cancer for which the results are promising.

Action on diabetes

Studies have shown that drinking hibiscus tea infusion at least once a day allows the body to fight insulin resistance, thus helping to stabilize and maintain a good blood glucose level in people with Type 2 diabetes.

Action on obesity

According to some studies, hibiscus could help to lose weight, or at least facilitate weight loss and prevent health problems related to overweight and obesity.

Its effect would come from its properties allowing to accelerate the metabolism, but also to decrease the absorption of starch and sucrose following a meal.

Hibiscus would also prevent fat accumulation. A study has shown this action in the liver, accumulation which can potentially lead to cirrhosis, cancer, or hepatocellular insufficiency. This effect would therefore help to combat non-alcoholic hepatic steatosis (NASH), an overload in liver fat unrelated to alcohol consumption.
Action on the urinary system

Hibiscus has excellent diuretic and antiseptic properties, so it is well indicated to cure small urinary infections, and prevent the formation of kidney stones.

Hibiscus is indeed effective for draining the bladder and for the proper functioning of the urinary system in general, properties recognised by EFSA, the European Food Safety Authority.

Other benefits of hibiscus tea

Hibiscus juice is an excellent digestive that helps to combat all mild disorders related to digestion.

It is an excellent tonic, allowing to fight with strokes of passenger fatigue.

In many traditional medicines, hibiscus juice is consumed to combat depressive states, acting on both fatigue, laziness, lack of motivation, etc. this action would come from the effect of some bio-flavonoids, studies are underway, to understand its benefits on depression.

dry hibiscus flower spoon

Hibiscus has antiseptic, antibacterial, anti-inflammatory and antiviral properties, it would help to cure colds, coughs, angina, rhinitis, flu and all inflammations of the upper respiratory tract.

Hibiscus and its analgesic properties make it possible to relieve menstrual pain, but also to facilitate it.

As a poultice, it is used to treat oozing eczema, allergies, edema and dermatoses.

Why and How to Improve Memory Power

Many of us easily forget information or have a hard time learning new information. That is why we need to maintain our brain in good condition and to learn how to improve memory power.

Why do we face memory problems?

Ageing is the main factor that causes us to forget easily or makes our learning process more difficult. This happens because we experience physiological changes which impact the brain. This should not be mistaken for memory loss. Memory loss as an indicator of dementia is more persistent (eg. difficulty in everyday skills, forgetting common names and words). Memory weakness caused by normal ageing can be prevented or corrected if we add small changes to our lifestyle.

How to improve memory power

Diet and exercise are the well known ingredients for a healthy body, and this includes the brain as well. In order to boost your memory, your diet should contain healthy fats (eg. avocado, salmon), antioxidants (the best source would be berries), vitamins and minerals (vitamin B6, B12, C) and good hydration (2-4 liters of water a day are recommended). Practicing sports or just going to the gym increases oxygen in the brain and enhances the effects of helpful brain chemicals.

Getting enough sleep is critical for your brain to operate at full capacity, and research shows that the brain’s memory enhancing activities occur during the deepest stages of sleep.

Stress causes damage to the hippocampus, the part of the brain that is responsible for formation of new memories and retrieval of old ones. In order to keep our brain in good shape and to maintain a strong memory, we should try to eliminate stress factors in our lives as much as we can. Meditation classes teach us how to improve memory power and also have an effect on the prefrontal cortex area of the brain, associated with feelings of joy. Meditation helps create more connections between brain cells, leading to increased memory ability.

Keeping our brain in shape is just as important as keeping our body fit. This can be done by using our brain in new or challenging activities, which will improve memory power. You can try to learn a new language, study an area of interest you have little knowledge of or even make small changes in your daily routine, like brushing your teeth with your non-dominant hand.

Learn how to improve memory power and keep the above tips in mind, and you will be healthy and sharp even at an older age.

How to Improve Concentration in the Long Run

Learning how to improve concentration is essential for a person’s success both professionally as well as on a personal level (relationships, parenting). Concentration is a person’s ability to focus on one single thought or task, without being distracted by factors surrounding that person. Strong concentration is hard to achieve and it can become a real asset in any activity we undertake.

  • Why do we face concentration problems?

The main explanation for the decrease in the ability to concentrate is that the brain changes with age. Older people tend to combine information coming from different sources more than younger people, a phenomena also known as sensory integration. This makes it harder to avoid distractions and reduces the ability to concentrate. Moreover, multitasking is becoming the rule to our daily activities, further undermining our concentration capacity.

  • How to improve concentration

The saying “You are what you eat” generally applies in practice and it is proven that following a healthy, balanced diet will lead to significant improvements both in concentration and memory. One should also consider some nutritious foods which improve concentration. Blueberries are a good choice, because they contain antioxidants which prevent brain damage and delay the aging effect on the brain. Whole grains and fruits improve blood flow, which is as important for the brain as for any other organ in the human body. A diet that is rich in fish – which contains omega 3 fatty acids – greatly improves the functioning of the brain. Sugar and coffee are also good energizers that help improve concentration – however, with a short-term effect. Moreover, these substances can trigger addiction and will damage our health on the long term, so do not abuse them.

Meditation was proven to be the best exercise to improve mental capacity and concentration. Techniques from Buddhist meditation classes can teach people how to improve their concentration. A good start to meditation, if you cannot attend such classes, would be to try to focus on your breath and to observe it. With time, this helps you avoid focusing on too many things at the same time.

Focus games such as crossword puzzles, word games and Sudoku improve both memory and concentration capacity.

Knowing how to maintain and how to improve concentration will help you stay in control of your actions in situations you face daily, and it will help you succeed in everything you do.
