French Bread Pudding

My family has a bad habit.

They buy bread- and never eat it.

I don’t even want to know how long all this bread has been in our freezer for. I couldn’t find the expiration date on any of the loaves, but one of the wrappers said ’2003′, so I’m going to pretend like nothing can mold in the freezer.

I have a ‘thing’ about wasting food. I actually feel physically uncomfortable when I see food being wasted, and I knew that eventually the 8 year old bread in our freezer was going to get tossed if I didn’t do something about it.

Solution? Bread pudding! I’m sure healthy recipes exist, but I think weekends are the perfect time for a decadent breakfast. We also served this for dessert last weekend when my aunt came over, and everyone seemed to like it both ways (that’s what she said)

French Bread Pudding Recipe

Ingredients:

  • 1 cup sugar
  • 1/2 cup butter, softened
  • 5 eggs, beaten
  • 2 cups half and half
  • 1 tsp cinnamon
  • 1 tbsp vanilla
  • 6 slices bread (I used sourdough- I imagine any bread would work)
  • Chocolate chips (optional)

Directions:

  • Cream butter and sugar.

  • Add eggs, cream, cinnamon, and vanilla. Pour just enough of the mixture to cover the bottom of  a 13×9 pan.
  • Layer a few slices of bread to cover the bottom of the pan.

  • Pour more cream mixture over the bread and add more bread on top. Repeat layers with remaining cream mixture and bread.
  • Cover with aluminum foil and bake for 45-50 minutes.

My mom also made a rum sauce to go on top- I never tried it, but it looked amazing!

Rum Sauce

Ingredients:

  • 1 cup sugar
  • 2 1/4 cups water
  • 1 tsp cinnamon
  • 1 tbsp butter
  • 1/2 tsp cornstarch
  • 1 tbsp rum

Directions:

  • Combine sugar, 2 cups water, cinnamon and butter and bring to a boil. Stir in cornstarch blended with 1/4 cup water and simmer, stirring until sauce is clear. Remove from heat and add rum. The sauce will be thin!

A breakfast that my family loved and used up some old bread? Perfect! I plan to make this again, but somehow all my chocolate chips disappeared. It’s like someone’s been eating them by the handful or something

Do you ever base your meals around what needs to be eaten? That’s pretty much how I decide what to eat every day!
