I love aromatic herbs when I don’t have much time in front of me (the weekend especially) I prepare for dinner a roast chicken in casserole, I let my chicken marinate in the refrigerator for a few hours so when I’m back home I add the vegetables and hop in the oven for 1 hour of cooking about everything will depend on the weight of the latter. - 1 free-range chicken
- 4 medium shallots
- 6 cloves garlic
- 1 yellow lemon
- 100 ml of water
- 50 ml olive oil
- 2 tbsp Provence herb soup
- 4 sprig of thyme
- 3 sprigs of rosemary or to taste
- coarse salt to taste
- freshly ground ground pepper
- Preheat oven to 200 C (400 F).
- In a bowl, combine the herbes de Provence, oil, coarse salt and pepper.
- Rub the mixture inside and outside the chicken.
- Place a whole lemon in the cavity of the chicken previously pricked on several places.
- Place all around the chicken the cloves of garlic, the shallots peeled and cut in half.
- If desired, add the peeled bell onions and the potato rings cut in half without peeling them.Pour the water all around the chicken.
- Roast the chicken until the skin begins to brown, 25-30 minutes. Halfway through cooking drizzle the chicken with its cooking juice and reduce the heat to 180 C (350 F) continue roasting the chicken for about 30 minutes (test cooking with a cooking thermometer that should record 74 C (165 F).
- Let the roast chicken rest for about 10 minutes before cutting.
- Serve with lemon wedges and drizzled with its cooking juice.
