Homemade Baileys Irish Cream Recipe

Ever wanted to make a homemade Irish cream or Baileys liqueur? Well, try this easy recipe then. It’s very similar to the real thing(even better if you make it right), but is made by you, with your unique personal touch and with ingredients you probably already have in your kitchen or can easily be found in your local grocery store.

You should definitely make this Baileys Irish cream recipe at home, believe me you will love it. When you have guests for dinner, whether for a special occasion or simply to spend the evening with friends, it is always a good idea to close the meal to propose a drink. A coffee, a tea or why not a glass of delightful chocolate liqueur?

For those moments, I offer you this whiskey cream or homemade Baileys. Obviously, it will not be exactly like that of the brand, but it will also be a very good whiskey cream, made by you, to which you have given your personal touch.

How to make a homemade Irish cream of whiskey or Baileys?

 

The recipe here gives the proportions of whiskey and sweet condensed milk that I normally use. The amount of the other ingredients are approximate and I vary them according to the desired result. Sometimes more chocolate, sometimes more coffee … try it with a little Toffee or salted butter caramel. That’s would be really great!

The realization of this whiskey cream is very simple, we mix everything in the blender and that’s it. You see, it’s very easy to prepare and it’s ready in a few minutes. The whiskey that I usually use is not a high quality whiskey, this one is said to be enjoyed alone. It is not the cheapest either, I tried with those and believe me the result is not terrible.

I suggest you use the whiskey you like for cocktails, especially coke whiskey. For the occasion of this article, I put an Irish whiskey that without being very expensive, I find it a good match.

 

Homemade Baileys Irish Cream Recipe

 

Ingredients

  • 350 ml of whisky
  • 400 g of sweetened condensed milk
  • 1 Little strong coffee (*)
  • 2 teaspoons of bitter cocoa powder (or grated pastry cocoa or even cacao nibs)
  • 1 teaspoon vanilla concentrate

Method

  1. Combine the sweetened condensed milk and whisky in the blender bowl.
  2. Place the lid (very important) and mix at low speed until the two ingredients are well mixed.
  3. Add chocolate, coffee and vanilla. Mix again to incorporate the ingredients.
  4. Taste and rectify the scents of chocolate, coffee or vanilla according to your desires.
  5. There you go, it’s ready ! Keep cool until ready to serve. To your health!

Of course you can use almost any brand, but I personally recommend the thermomix blender as the perfect choice for your homemade baileys liqueur. It’s an established and high quality brand which you can trust. I’ve been using my thermomix for more than three years without any issues. Plus its incredibly powerful and sturdy, you can literally blend rocks or your cell phone with it, though I don’t guarantee you’ll be able to use your blender after the stunt ;-).

To make your  homemade Irish cream Baileys liqueur without condensed milk you can just use high fat whole milk, but you’ll get best results with any cream or even whipping cream with high fat content. If you use just milk, you will still get close, but your Irish cream may be too thin lacking consistency and creaminess.

You can make homemade Baileys with egg yolks, which will give you even more flavor. Just cook the egg yolks over low heat for about 10 minutes and mix them with some milk when cooled down a bit. Then follow the recipe method given above. Basically, you make something like eggnog and mix it with the baileys ingredients.

Homemade baileys Irish cream recipe with vodka

In order to make your homemade baileys more economic you can use vodka instead. You just substitute the whiskey with vodka in the recipe and you are all set.

Tips and tricks

The whiskey cream is served well cold. Preferably, with ice.
The homemade cream liqueur you made can be stored for several days in the refrigerator in a tightly closed bottle. Although I usually prepare it when I have guests, it rarely remains at the end of the evening, or the little that remains I usually consume it within 1 or 2 days.

It is possible that the liquids will separate if it is kept too long. If this happens, mix it again or shake the bottle. If you want to prepare whiskey cream, keep it and it remains intact for a long time, add 1 tablespoon of food glycerin to the end and mix thoroughly. This dietary glycerin can be found in specialized pastry shops. It can also be purchased online (Amazon, for example).

If you want a stronger creamy texture in your homemade baileys liqueur, feel free to add a bit more.
( * ) Use well-concentrated coffee, the first drops coming out of the coffee maker, before it loses intensity as the water flows.
The whiskey cream can be perfumed not only with chocolate, coffee and vanilla, but also with caramel, almond extract, or cinnamon … avoid fragrances that give acidity like lemon.

To give it a more liquid consistency and soften its flavor, add a little liquid cream.
No need to use a high-quality expensive whiskey. Use your favorite cheap brand you usually use for Whiskey and Coke.
