Easy Homemade Keto Avocado ice cream Recipe
- 2 avocados
- 2 tablespoons of lemon juice
- 1 lemon grated
- 1 teaspoon of vanilla extract
- 5 tablespoons of sugar
- 1cup yogurt
- ½ Cup of milk
- Cut the avocados in half and remove the seed.
- With a spoon, remove the pulp.
- Place it in a container together with the lemon juice so that it does not turn brown.
- With a fork, crush the pulp until you get it properly mashed.
- Add yogurt and sugar. Mix well.
- Incorporate milk, while stirring to mix the ingredients properly.
- Finally, add grated lemon peel and the vanilla extract. Make sure that the mixture is sweet enough. if necessary, add a couple more tablespoons of sugar (or honey).
- Beat vigorously to obtain a homogeneous creamy texture.
- Place the mixture in a container, better if it's made of aluminum, .
- Place it in the freezer for two hours.
- Then take it out, crush and mix (or blend in a powerful blender) and freeze again for two hours.

Avocado ice cream in Vitamix or Thermomix
Put all the ingredients in the blender and blend for 1 minute in progressive speed from 7 to 10 setting. then plane in a container or proper ice cream mold and follow the recipe above.
Tips and Notes
If you want to spice up the ice cream, bring the cream almost to a boil with a couple of peppermint or fresh mint leaves. Let it rest until it cools to properly infuse the cream with the mint. This will give your avocado ice cream freshness and aroma.
If you have Invert Sugar made at home, add it to the ice cream mixture. It’ll be a perfect anticoagulant.
You can also add some high quality matcha green tea powder when you blend it or/and sprinkle on top after you serve the ice cream.
