Mexican Carne Asada Recipe

This classic from northern Mexico is found in all American tacos shops. Carne asada is a fast, nourishing and versatile dish, it is well understood why it was originally one of the most interesting options for satiating the inhabitants of the desert. It is important to flatten the meat well so that it cooks quickly.

Carne Asada or “grilled meat”, most often refers to chopped or sliced beef. This style of tacos is traditionally prepared in beef in lemon juice, spices and a pinch of salt. It is then briefly grilled a wood fire, which creates this signature flavor of burnt beef licked by flames. It is especially popular in the northern states of Mexico.

Ingredients

2-3 (680 grams) beef bibs, for a total of about 1 and a half pounds of meat

4 cloves of garlic, chopped

1 onion, chopped very finely

2 tsp (10 ml) smoked paprika, (sweet or strong to taste)

2 tsp (10 ml) cumin

2 tsp (10 ml) chili powder

3 tbsp (45 ml) of neutral-tasting oil (e.g. sunflower), divided

1 small jalapeno pepper, seeped and chopped (optional)

The juice of 1-2 limes and 1 lemon, (for about 1/4 cup of liquid in total)

1/4 cup Mexican beer, (Corona, Dos Equiis, etc.)

Salt and pepper, to taste

Preparation

Place the meat on a large plate, then add garlic, half of the onion, paprika, cumin, chili, and 2 tbsp of the oil. Salt and pepper. With your hands, “massage” the meat to well spread the seasonings.
In a large frying pan, heat the remaining oil (1 tbsp.) over high heat. Grasp the meat for 2-3 minutes without moving it, then turn the meat with pliers to grasp it on the other side (for 2 more minutes).
Transfer the meat to the bowl of the slow cooker. Add the remaining onion, jalapeno pepper, citrus juice and beer on top.
Cover and cook 4 hours at high intensity, or 6 hours at low intensity.
Pinch the meat with a fork.

In Mexican cuisine, carne asada, is a meat marinated or seasoned and then cooked slowly, normally on a grill. This equally delicious – and more tender-version is made rather in the slow cooker. Once frayed, this meat is used in many Mexican meals : tacos, burritos, enchiladas, quesadillas, etc.
