Homemade Nutella Ice Cream Recipe

Since I bought an ice cream maker last week, I had to test my new toy and try making a homemade Nutella ice cream 🙂

For this first ice cream recipe with ice cream maker I chose to make it with Nutella as I am in love with anything with chocolate and cream in it 🙂

And as I always say, if you don’t really like this recipe, replace one ingredient with another spread or a homemade nut butter! You can also check my Easy Homemade Nutella Recipe.

In any case I am super happy with the result, the texture of the ice crystals is more mellow and creamy than the one made without an ice cream maker. And for those who don’t have ice cream maker and are tempted by this recipe, I added the a variation of the recipe without an ice cream maker at the end of the recipe.

The Nutella taste is prominent and you can certainly feel it. And once the ice cream is done it is not too sweet. I mean, if it’s sweet, it’s still Nutella ice cream; -) but it’s not disgusting.

Homemade Nutella Ice Cream Recipe

Ingredients: (makes about 10 ice cream balls)

  • 40cl (400 ml) whole milk
  • 4 egg yolks
  • 20g of sugar
  • 200g nutella (or other chocolate/hazelnut spread)

Preparation:

  1. Bring milk to a boil.
  2. Meanwhile, whisk the egg yolks with the sugar so that the mixture blends and becomes thicker.
  3. Pour the hot milk over the eggs and mix well. Pour the mixture into the saucepan and place on a low heat, mixing continuously without spilling the mix over the edges of the saucepan, until thickened, enough so the cream should stay over the spoon.
  4. Once the right consistency is obtained, add the nutella, put the mixture out of the heat and whisk vigorously until a smooth and homogeneous cream is obtained. Refrigerate for at least 1 hour in as cold a temperature as possible, preferably in a freezer.
  5. Once the preparation is cold enough (almost frozen, but not completely frozen, otherwise you’ll have to brake it every time ), put the mixture in an ice cream maker for about 30 minutes. I use this ice cream maker, which is not too expensive but quite efficient.
  6. Once the ice cream is taken in the ice cream maker, taste it immediately or reserve in the freezer, for my part I replace it 1h in the freezer for a more compact texture. Remove the ice 10 / 15minutes from the freezer before serving.

If you want to make it without an ice cream maker do this: proceed in the same way by pouring the preparation into a tupperware-type container and place in the freezer for 3h, stirring the ice with a fork, about every hour. During these 3 hours (or a little more if necessary depending on the power of your freezer) mix and stir the ice to obtain smooth and creamier texture. You can use a blender to blend the ice cream properly.
