Today I’m going to show you an easy and delicious homemade fajitas recipe. It’s made with chicken breast, but you can use also beef or pork meat too.

The Mexican cuisine is so rich and particularly diverse. It’s bright, colorful and spicy, and is often mistakenly attributed to dishes from Tex-Mex cuisine such as chili con carne or nachos.

And tacos, these wraps filled with meat or fish and vegetables, frijoles (black beans), dried beans of various colors and is eaten both for breakfast and lunch along with guacamole, these are some of the best known recipes around the world, but Mexican cuisine is full of generous and tasty recipes which you can enjoy whenever you are.

What are Fajitas?

 

Fajitas are one of the iconic foods in increasingly popular Mexican cuisine. A soft tortilla in which spicy meat, crunchy peppers and onions with salsa are rolled up. They are ideal for meals with friends and Family, easy to prepare and share and never fail to arouse the appetite. Fajitas are very similar to Greek souvlaki wraps and Mexican falafels.

Homemade Mexican Fajitas ingredients

Ingredients

  • 2 chicken breast fillet
  • 1 small red onion
  • 1 green pepper
  • Olive oil
  • 10 ml (2 tsp) oregano
  • 10 ml (2 tsp) ground cumin
  • 10 ml (2 tsp) paprika
  • 1/2 tsp (2.5 ml) cornstarch
  • 5 ml (1 tsp) garlic powder
  • 2 ripe avocados
  • 1/4 cup (65 ml) chopped fresh coriander
  • 2 tbsp (30 ml) lemon juice
  • 12 small tortillas
  • 250 ml (1 cup) Greek yogurt
  • 250 ml (1 cup) salsa sauce
  • 250 ml (1 cup) cherry tomatoes, diced
  • 250 ml (1 cup) spinach
  • Salt and pepper

Tip:

Greek yogurt and guacamole will help soften the too strong taste of this spicy mixture.

Preparation

  1. Cut chicken breasts into strips.
  2. Cut the peppers and onions into strips.
  3. Heat a little oil at the bottom of a frying pan and caramelize the onions in the hot oil.
  4. Add the chicken in the hot oil and cook until it is no longer pink.
  5. Meanwhile, mix the spices and sprinkle them on the chicken fillets little by little, mixing well.
  6. Cook the chicken until golden brown and the spice mixture forms a beautiful crust around the chicken.
  7. At the end of cooking the chicken, add the peppers to warm them up, but they remain crispy.
    Guacamole :
  8. Mash the flesh of the avocados with a fork in a bowl. Add fresh coriander and lemon juice to the bowl and mix.
  9. Warm the tortillas in the pan or microwave.
  10. When serving, garnish the tortillas with the chicken mixture, some spinach leaves, cherry tomatoes, Greek yogurt, salsa and guacamole. Season to taste.
