Over the river and through the woods, to a big long hike we go!

I went on a hike with my sister this morning to a park I’d never been to before. It trips me out to think that there is actually (kind of) wilderness only 20 minutes from my house! I don’t know why I don’t go more often.

We had trouble finding a good hiking trail at first. We found something we thought looked promising but it ended up being super flat and right next to a neighborhood. We wanted to find something more challenging, and find it we did!

All I had was my trusty Garmin to tell us the distance- we couldn’t figure out how long the trail was on a map. Although the trail was incredibly hilly- like, really really hilly- we both felt great and wanted to go as long as possible.

We only got lost once, which I consider a huge miracle because we both take after my dad in that we have no sense of direction Well, we weren’t really lost- we just started taking a trail back that we weren’t positive would lead us back to our car. Better safe than sorry!

So many bad cell phone pictures- not only did my camera die about two minutes into the hike, my memory card wasn’t even in! Double fail.

Pictures do not do this view justice! We had heard of a lookout point that was pretty spectacular, but it looked too far away on the map. So glad we found it! On a clear day, you can see the ocean. Too bad it wasn’t clear enough!

We planned to hike for five miles, but we just kept going and going and ended up at TEN miles! My bum is going to be soooooore tomorrow.

It was a great way to spend the day. I need to bring more food next time and work on walking downhill. I have no problem going uphill, but I’m so scared of falling when I go down a steep downhill!

I was pretty much starving when I got home, so I whipped up a new nut seed butter for Nut Butter Week. I’m so glad I decided to make sunflower seed butter today. This is by far the fastest recipe of the week!

Just Like Trader Joe’s Sunflower Seed Butter

Sunflower Seed Butter


  • 3/4 pound sunflower seeds
  • 1/4 cup agave
  • Salt and oil as needed


  • If you’re using raw sunflower seeds, roast them until slightly brown and salt if desired. I used pre-roasted and pre-salted seeds, so I skipped this step.
  • Toss them in your food processor and let them go until buttery. I started drizzling in oil (about two tablespoons) after about a minute, and another minute later it was totally done and creamy- I didn’t even have to stop and scrape the sides!

I think sunflower seed butter is an acquired taste- I actually didn’t care for it when I tried it a few months ago, but now I love it. If you’re a fan of sweet / salty combos (like me!) then I think you’ll love this.

  • Ease of Butterization- VERY easy! Came together in two minutes.
  • Consistency- Drippy!
  • Sweetness- Only slightly- it’s pretty salty
