Ingredients

For 8 people (though if you cut on smaller pieces squares, triangles you’ll get more, but who wants small brownies;-))

  • Cooked beets 300 g (or beetroot powder)
  • Butter 200 g
  • Chocolate fondant without milk 250 g
  • 3 medium eggs
  • Sugar (preferably brown) 200 g
  • Wheat flour 60 g
  • Cocoa powder 30 g
  • Baking powder (half a teaspoon) 3 g
  • Pinch of salt

How to make beet brownies at home

1. We start by pre-heating the oven to 180ºC and lining a square mold of 23×23 cm with baking paper, previously greasing the base and sides with a little butter so that it is well fixed. Once ready, we crush the beet until a puree, place it on a colander and press with the back of a spoon to release its juice. Reserve.

2. Melt the butter together with the chocolate. We can do it in the microwave to blows of 30 seconds, stirring between blow and blow so that we do not burn, or in the traditional way to Bain Marie. For the latter we will need to place the two ingredients in a bowl and fit over a saucepan with hot water. The Steam will cause them to melt slowly. Let it temper slightly.

3. Then, with the help of electric rods, beat the eggs and sugar until blanched and get them to double their volume. Its consistency will have changed, we will have a creamy mass to which we will add the mixture of melted chocolate and butter. Stir until well integrated.

4. Sift flour, cocoa powder and chemical impeller. We add it to the above mixture together with a pinch of salt. We pour the mixture into the mold and bake it at 180C (350F) or gas mark 4, for 25 minutes.

5. Once cooked, remove the mold from the oven and let it temper before consuming. Our recommendation is to let it stand 24 hours, warm and inside a plastic bag. In this way the beet brownie “sweats” by the effect of steam and gets better flavor body profile, becomes juicier and its taste is enhanced. It is much richer although the key is to have patience and know how to wait.

What To Use For Decorating The Beet Brownies

You can sprinkle some beet powder on top, powdered sugar(will look like a snow), cocoa powder, even some nice organic matcha. Basically any powdered ingredient suitable for desserts will be fine. You can garnish with chopped nuts or seeds too.
